Delicious Ingredients:
• 500g pork neck or pork shoulder
• 2 tablespoons soy sauce
• 2 tablespoons oyster sauce
• 1 tablespoon sugar (palm sugar if possible)
• 1 teaspoon black pepper
• 1 tablespoon vegetable oil
• 1-2 cloves garlic (minced)
Instructions:
1. Marinate the pork: In a bowl, mix soy sauce, oyster sauce, sugar, black pepper, oil, and minced garlic. Add the pork neck to the mixture, ensuring it is well-coated. Let it marinate for at least 30 minutes (or up to overnight for best results).
2. Grill the pork: Preheat the grill or stovetop grill pan. Grill the pork over medium-high heat until cooked through, turning occasionally, for about 12-15 minutes. The pork should develop a nice char on the outside while remaining juicy inside.
3. Rest and slice: Let the pork rest for a few minutes, then slice it thinly against the grain.
For the Spicy Dipping Sauce (Nam Jim Jaew):
Ingredients:
• 2 tablespoons fish sauce
• 2 tablespoons lime juice
• 1 tablespoon toasted ground rice (optional but traditional)
• 1 tablespoon chili flakes
• 1 teaspoon sugar (optional)
• 1-2 cloves garlic (minced)
• Fresh cilantro or green onions (chopped, for garnish)
Instructions:
1. In a bowl, mix fish sauce, lime juice, chili flakes, and sugar. Adjust the taste by adding more lime or sugar based on your preference.
2. Add the toasted ground rice (if using) and minced garlic. Stir well.
3. Garnish with cilantro or green onions.
Serving:
Serve the grilled pork with the Nam Jim Jaew dipping sauce on the side. Enjoy with sticky rice or as part of a larger Thai meal.
